The traditional American cupcake, which was developed at the beginning of the 19th century, is actually a personal cake. It could seem a muffin, but it’s usually covered in rich colored buttercream. There are a number of recipes that explain how to do a good cupcake. But if you love strong flavor you have to taste it with coffee.
Ingredients for about 18 coffee cupcakes:
140g sugar
140g butter
3 eggs
140g flour
2 tablespoons espresso mixed with 1 tablespoon water
Preheat oven to 170C/150C. Beat the sugar with the butter until it becomes creamy. Add eggs and only 1 tablespoon flour. Beat in the rest of the flour along with the espresso. Bake the cake cases for about 15 minutes.
For the icing:
200g butter
200g icing sugar
2 tablespoons espresso mixed with 1 tablespoon water
20g melted dark chocolate
Some coffee beans to decorate the cupcakes
Beat the butter with icing sugar. Add espresso and chocolate. When the cupcakes are cold swirl the icing on their top and decorate with coffee beans.
Your cupcakes will be light with a delicious coffee taste!
